Prof. Fred J. Alway, agricultural chemist of the University of
Nebraska, was recently sent to Kansas City to tell what he knew of
nitrite poisoning and bleached flour, and gave some valuable
evidence on behalf of the millers.
He has spent years in research along the particular line in
controversy and was peculiarly well qualified to give
evidence.
It was at the suggestion of Professor Alway that the
legislature of Nebraska passed a law permitting the use of
nitrogen peroxide in the bleaching of flour.
He is the son of Mr. F. Alway of this place.
